Foodie parents and an art background resulted in the perfect career collision for cake maker and owner of I Scream Cakes in St. Louis Kerry Soraci, who meticulously creates edible ice cream works of art for her customers. From shark attacks to pop culture caricatures, nearly all of Soraci’s deliciously creepy designs have an element of what she calls the “sick and twisted.”
How it happened
“For me, food and art are intertwined,” says Soraci, also a tattoo artist. “I think of flavor and color in the same way, even though they use different senses.” While flavors are contrasted in the process of ice cream making, the same goes for color in art, according to Soraci, who says she realized ice cream was just like clay when she started making her handcrafted concoctions at home about four years ago. She’s since moved into her own shop, with both counter and cake ordering services, on the hip and unconventional Cherokee Street in St. Louis.

The from-scratch delicacies at I Scream Cakes offer something for everyone. Only the highest-quality ingredients, like organic dairy, eggs and sugar, or Ecuadorian chocolate, are used to create an almost completely gluten-free menu. Vegans find great options as well, with Soraci’s agave-based flavors and even pets get in on the action with her all-natural doggie ice cream selections.
Soraci feels that using the best ingredients, in lieu of processed ones, means her products are better for her customers. “My ice creams and cakes are a sweet treat, yes,” says Soraci. “But they’re made with the best ingredients, which means they’re more flavorful and rich. That means you can keep portion size small.”
